Unicorn Cupcakes

Instructions

Preheat oven to 350 F and line a 12-cup muffin tin with cupcake liners.

Combine flour, baking powder, and salt in a bowl.

Beat eggs and sugar until foamy, then gradually add melted butter and vanilla.

Alternately add the flour mixture and milk to the egg mixture, mixing until just combined.

Divide batter into liners; bake 18-20 minutes until a tester comes out clean.

Cool cupcakes 10 minutes in the tin, then remove to a rack to cool completely.

For frosting, beat softened butter until smooth. Add powdered sugar, heavy cream, vanilla, and salt; beat until combined.

Pipe frosting swirls onto each cupcake and decorate with pastel sprinkles.

Coat diagonally halved marshmallows in pink sanding sugar.

Place two marshmallow ears and a gold spiral candle (for a horn) on each cupcake.
