Unicorn Cookies Recipe
Craft whimsical unicorn sugar cookies with ease, featuring vibrant icing and edible shimmer.

Instructions

Preheat oven to 350°F and line baking sheets with parchment paper.

Sift flour and baking powder together in a large bowl; set aside.

Cream butter and sugar until light and fluffy (about 4 minutes), then mix in egg until pale.

Stir in vanilla extract and salt.

Gradually add flour mixture, mixing until just combined after each addition.

Refrigerate dough for 1 hour.

On a floured surface, roll dough and cut into unicorn shapes. Place on prepared sheets and bake for 8-10 minutes.

Transfer cookies to a wire rack and cool completely.

For icing, whisk water and meringue powder until foamy, then add cream of tartar and whisk again.

Add powdered sugar and mix on medium speed for 10 minutes until thick.

Keep 2/3 of the icing white. Divide the remaining icing into 5 portions and dye pink, purple, blue, yellow, and green. Transfer each color to a piping bag with a small round tip.

Outline and fill all cookies with white icing.

Apply edible gold shimmer to each unicorn horn.

With pink icing, fill ears, add cheek dots, and pipe one flower on the forehead.

Pipe a purple flower to the left of the pink one.

Pipe two small blue flowers to the right of the pink one.

Add yellow dots around the flowers.

Add green dots around the flowers.

Once white icing sets (can be sped up in freezer), draw eyes and eyelashes with an edible pen.
