Uncured Fresh Homemade Bacon
A quick and easy method for preparing delicious uncured, unsmoked fresh bacon at home.

Instructions

Preheat the oven to 200 F.

Coat the pork belly thoroughly with combined spices.

Wrap the pork belly snugly in two layers of heavy-duty aluminum foil.

Place the wrapped pork in a roasting pan and bake for 3.5 hours.

Turn off the oven, leaving the pork inside to cool for 1.5 hours.

Remove from oven and refrigerate overnight.

Unwrap the pork belly, scrape off any gelatinous juices, and cut into thick slices.

Brown the slices in a pan, adding extra fat from the foil if desired.

Drain on paper towels and sprinkle with additional salt if needed.
