Instructions

  1. Combine 2 cups cooked rice, 2 tablespoons chopped cilantro, and lime juice from 2 limes in a microwave-safe bowl; heat until hot, then stir.

  2. Sauté 1/2 diced onion in 2 tablespoons oil in a large skillet for 5 minutes until soft, then add 3 to 4 minced garlic cloves and cook for 1 more minute.

  3. Reduce heat to medium-low. Stir in 1 (15-ounce) can beans, 1 tablespoon chili powder, 1/2 teaspoon cumin, and 1 tablespoon hot sauce; cook for 5 minutes until heated through.

  4. Distribute the cilantro-lime rice and bean mixture among 4 warmed 10-inch tortillas, then add desired toppings.

  5. Fold in the short ends of each tortilla, then fold one long side over the filling, pressing to secure, before rolling tightly to complete the burrito.
