Instructions
-
Gather Mason jars, wooden skewers or strings, and clothespins, then clean the jars thoroughly with hot water.
-
Dip skewers or strings halfway into water, then roll them in granulated sugar and set aside to dry.
-
Start boiling 2 cups of water in a medium saucepan. Gradually add 6 cups of granulated sugar, stirring until fully dissolved, then remove from heat to create the syrup.
-
Stir 2-3 drops of food coloring or 1/2 teaspoon flavoring oil (or 1 teaspoon extract) into the hot syrup if desired.
-
Allow the sugar syrup to cool for 20-30 minutes.
-
Rinse jars with hot water, then fill them with the warm syrup.
-
Suspend a sugared skewer or string into each jar using clothespins, ensuring it hangs approximately 1 inch from the bottom.
-
Place jars in a cool, undisturbed location, loosely covered.
-
Expect crystals to form within 2-4 hours; if no change after 24 hours, re-boil the syrup, dissolve an additional cup of sugar, and repeat steps 6-8.
-
Let the candy grow to your preferred size, ensuring it does not adhere to the jar sides.
-
Break the top crystal layer with a fork, then carefully remove the finished candy.
-
Transfer the rock candy to an empty jar to dry for 1-2 hours.
-
Serve immediately or wrap for later storage.
