Ukrainian Blueberry Dumplings (Varenyky)
Ukrainian varenyky are blueberry-filled boiled dumplings, enhanced by a simple blueberry sauce.

Instructions

Start boiling salted water for the varenyky.

Combine flour, salt, egg, and enough water in a bowl to form a medium-soft dough; knead until smooth. Halve the dough, cover, and rest for at least 30 minutes.

For the filling, cook blueberries, sugar, optional liquor or lemon juice, and cinnamon in a saucepan over low heat until boiling, then simmer for 2 minutes and set aside.

On a floured surface, roll one dough half 1/8-inch thick and cut into 3-inch circles.

Place 3 to 4 blueberries (from the cooked mixture, leaving liquid) on each dough circle. Fold the dough over to form a half-circle, pressing the edges firmly to seal and remove air.

Place filled dumplings on a floured surface and cover. Re-roll scraps and continue with remaining dough.

Drop 6 varenyky at a time into the boiling water, stir, and cook rapidly for 3 to 4 minutes until puffed.

Remove varenyky with a slotted spoon, drain, and coat generously with melted butter. Cover and keep hot.

Make the sauce by adding cornstarch to the remaining blueberry liquid in the saucepan and heat over low until slightly thickened.

Dust cooked varenyky with confectioners' sugar and serve with sour cream and the blueberry sauce.
