Instructions

  1. Preheat the oven to 375 F.

  2. Boil 1 cup water with 4.5 tsp sugar, salt, and oil; then cool to lukewarm.

  3. Dissolve yeast and 1.5 tsp sugar in 1/4 cup lukewarm water.

  4. Combine flour, the cooled sugar-water mixture, and yeast mixture; knead dough until smooth (7-10 minutes).

  5. Transfer dough to a greased bowl, cover, and let rise until doubled.

  6. While dough rises, boil and mash potatoes until soft. Season with salt and mix in grated cheese; allow to cool.

  7. Punch down dough, divide into two portions on a floured surface, cover, and rest for 15 minutes.

  8. Roll one dough portion on a parchment-lined baking sheet into a 9x13 inch rectangle or 12-inch circle. Spread potato filling within 1/2 inch of the edges.

  9. Roll the second dough portion, place it over the filling, and pinch edges to seal. Prick the top with a fork, cover, and let rise for 30 minutes.

  10. Bake for 30 minutes until browned, then cool on a rack.
