Ukrainian and Slovak Pagach Bread (Pagac)
A traditional Ukrainian/Slovak pagach, also known as Slavic pizza, is a potato or cabbage-stuffed bread often served during meatless meals.

Instructions

Preheat the oven to 375 F.

Boil 1 cup water with 4.5 tsp sugar, salt, and oil; then cool to lukewarm.

Dissolve yeast and 1.5 tsp sugar in 1/4 cup lukewarm water.

Combine flour, the cooled sugar-water mixture, and yeast mixture; knead dough until smooth (7-10 minutes).

Transfer dough to a greased bowl, cover, and let rise until doubled.

While dough rises, boil and mash potatoes until soft. Season with salt and mix in grated cheese; allow to cool.

Punch down dough, divide into two portions on a floured surface, cover, and rest for 15 minutes.

Roll one dough portion on a parchment-lined baking sheet into a 9x13 inch rectangle or 12-inch circle. Spread potato filling within 1/2 inch of the edges.

Roll the second dough portion, place it over the filling, and pinch edges to seal. Prick the top with a fork, cover, and let rise for 30 minutes.

Bake for 30 minutes until browned, then cool on a rack.
