Ube Ice Cream Recipe

Instructions

  1. Freeze the ice cream maker bowl overnight.

  2. Rehydrate powdered ube: simmer ube and water in a saucepan for 5 minutes until thick, then cool completely for 10 minutes.

  3. In a bowl, whisk milk and sugar until dissolved.

  4. Stir in heavy cream, ube extract, optional food coloring, and the cooled rehydrated ube until fully combined.

  5. Churn the mixture for about 25 minutes as per manufacturer's instructions.

  6. For firmer ice cream, transfer to an airtight container and freeze for 2 hours.
