Tuscan-Style Chicken Soup

Instructions

Heat oil in a large saucepan over medium heat, then sauté carrots, celery, and onion until softened.

Stir in garlic and thyme for 2 minutes until fragrant.

Add potatoes, chicken stock, salt, and pepper; bring to a boil. Reduce heat, cover, and simmer for 20 minutes until potatoes are tender.

Stir in beans and cook for 5 minutes.

Add shredded chicken and cook for 2 to 3 minutes.

Mix in kale and simmer until wilted; season with salt and pepper to taste.

Serve topped with grated Parmesan, a piece of bread, and fresh parsley or thyme.
