Turon (Banana Lumpia) With Caramel
A popular Filipino sweet treat, Turon features bananas rolled in brown sugar, enveloped in wrappers, fried, and finished with a caramel coating.

Instructions

Heat vegetable oil to 350 F in a medium pot.

Peel 8 lumpia wrappers and cover them.

Peel bananas and cut each into four pieces lengthwise.

If using jackfruit, drain, pat dry, and slice it into quarter-inch strips.

Place dark brown sugar in a shallow dish.

Mix cornstarch with water in a small dish to create a sealant.

For each turon: Place a wrapper, roll one banana piece in brown sugar, and position it on the wrapper.

If using, top the banana with four jackfruit slices.

Fold the wrapper bottom over the fruit, roll once, then fold in the sides and continue rolling.

Paint the wrapper edge with the cornstarch mixture and finish rolling.

Fry the turon in two batches for 2 minutes per side until browned and crisp; cool on a wire rack for 20 minutes.

After cooling, place 0.5 cup sugar in a clean saucepan and heat on medium-high until it melts and turns amber.

Gradually add the remaining 0.5 cup sugar, swirling constantly until fully melted and dark amber. Turn off heat.

Using tongs, dunk each turon in the caramel to coat, then place on parchment paper to set for about 5 minutes until the caramel hardens.
