Turnip Soup With Turnip Greens

A simple turnip soup recipe that makes excellent use of both the turnip root and its attached greens.

Instructions

  1. Prepare turnip greens by removing them from the turnips, washing, and cutting into thin strips; set aside.

  2. Peel and chop turnips into small chunks; set aside.

  3. Chop onions or leeks, thinly slice garlic, and finely chop bacon or pancetta if using; set aside.

  4. Heat oil in a pot over medium-high heat. Cook bacon or pancetta until fat renders, then add onions or leeks with salt and cook for 3 minutes until soft.

  5. Add garlic and cook for 1 minute until fragrant.

  6. Stir in chopped turnips and broth. Bring to a boil, then reduce heat to simmer for 8 to 10 minutes until turnips are tender.

  7. Stir in the greens and cook for about 2 minutes until wilted and tender.

  8. Season the soup to taste with salt or other seasonings.

  9. Serve hot, optionally garnished with black pepper.
