Instructions

  1. Prepare the syrup: In a saucepan, boil water and sugar until dissolved. Reduce heat, simmer for 15 minutes, then add lemon juice and simmer for 1 more minute; cool completely.

  2. Make the dough: In a large saucepan, melt water, butter, and sugar. Stir in flour with a wooden spoon until a loose dough forms and gathers; remove from heat.

  3. Vigorously beat in one egg at a time with a wooden spoon until fully incorporated, then mix in semolina and cornstarch.

  4. Transfer dough to a pastry bag with a star tip.

  5. Heat 3 inches of vegetable oil in a deep frying pan to 350°F.

  6. Squeeze 2-inch dough lines into the hot oil, cutting with kitchen scissors; turn pieces to brown evenly.

  7. Remove browned tulumba from oil, drain on paper towels, and submerge in the cool syrup for a few minutes.

  8. Transfer syruped tulumba to a serving platter and repeat frying for remaining dough.

  9. Serve with extra syrup and optional ground nuts; refrigerate leftovers for up to three days.
