Turkish Tahini Helva Recipe

Instructions

  1. Start boiling water in a medium saucepan over medium-high heat.

  2. Prepare an 8.5x4.5 inch loaf pan by lightly spraying and lining it with parchment paper, leaving an overhang.

  3. Place tahini in a large heatproof bowl; stir in pistachios, if using, and set aside.

  4. Once water boils, add sugar and stir until dissolved.

  5. Attach a candy thermometer and cook the syrup over medium-high heat until it reaches 250 F, brushing down any sugar crystals from the pan sides with water.

  6. Gradually add the hot syrup to the tahini, stirring constantly for 20-40 seconds until the mixture thickens and pulls away from the bowl.

  7. Quickly transfer the mixture to the prepared loaf pan; top with more pistachios if desired.

  8. Allow the helva to cool completely, then use the parchment overhang to remove it from the pan.

  9. Discard parchment, cut into squares, and serve, garnishing with additional chopped nuts if desired.
