Turkish-Style Stuffed Peppers (Biber Dolması)

Instructions

  1. Prepare peppers by washing, removing stems, and cleaning out seeds.

  2. For the filling, fry onions in olive oil until soft, then add and brown pine nuts.

  3. Stir in remaining dry ingredients, then add water and grated tomato. Bring to a boil, then cover and simmer until water is almost absorbed; let cool.

  4. Arrange empty peppers upright in a saucepan.

  5. Fill each pepper with the cooled rice mixture, leaving room for expansion.

  6. Cover each pepper opening with a tomato square. Add water to the pan to reach halfway up the peppers, drizzle with olive oil, and season the water with salt.

  7. Bring the pan to a gentle boil, then reduce heat to low and simmer, covered, until most water is absorbed.

  8. Remove from heat and let steam until cooled to room temperature.

  9. Serve cooled peppers, drizzled with olive oil and garnished with fresh dill, if desired.
