Turkish-Style Revani Semolina Cake Steeped in Syrup

Instructions

  1. Preheat the oven to 350 F (175 C) and grease a 9x13-inch baking pan.

  2. Prepare the syrup: combine sugar and water in a medium saucepan, bring to a boil, then reduce heat and simmer for 10 minutes; add lemon juice and let cool completely.

  3. In a large bowl, whisk eggs and sugar until dissolved.

  4. Add oil, lemon zest, vanilla, and yogurt, whisking until combined.

  5. Stir in flour, semolina, hazelnuts, baking soda, and baking powder until a smooth batter forms.

  6. Pour the batter into the prepared pan and bake for 30 to 40 minutes, until the top is browned and a toothpick inserted into the center comes out clean.

  7. Let the cake rest for 5 minutes, then cut into portion-sized pieces while still in the pan.

  8. Slowly drizzle all of the cooled syrup over the warm cake; cover with foil and refrigerate for several hours.

  9. Garnish each serving with coconut and ground nuts before serving.
