Instructions

  1. Boil salted water in a medium saucepan.

  2. Cook shrimp for 1 to 2 minutes in the boiling water, then drain and rinse under cold water.

  3. Chop the onion, garlic, peeled tomatoes, and cleaned green peppers; prepare the mushrooms.

  4. Heat olive oil in a saucepan and sauté the chopped onion and garlic until softened.

  5. Add the green peppers and continue cooking for a few minutes.

  6. Stir in the tomatoes, mushrooms, tomato paste, and spices; simmer until the liquid reduces significantly.

  7. Gently mix in the cooked shrimp.

  8. Transfer the mixture to oven-safe dishes and top generously with grated cheese.

  9. Preheat the oven to the broil setting, then cook the casserole(s) until the cheese is bubbly and browned.
