Turkish Şalgam Suyu
A popular fermented beverage from southeast Turkey, Şalgam juice is crafted from purple carrots and other vegetables.

Instructions

Peel and slice the turnip and beet; peel and quarter the carrots.

Wrap a half loaf of bread in cheesecloth to form a sack and place it into a glass jar.

Add the prepared vegetables and all other ingredients, excluding salt, to the jar.

Dissolve salt in 3 cups of purified water, then pour into the jar and add more water until all vegetables are completely covered.

Seal the jar tightly and ferment in a cool place for 15 days.

After 15 days, open the jar and remove the bread sack.

Chill the Şalgam juice; the pickled vegetables can be served alongside.
