Turkish Ramadan Flat Bread (Pide)

A Turkish leavened flatbread, known as pide, prepared with an egg-yogurt wash before baking, is ideal for breaking the fast during Ramadan.

Instructions

  1. Preheat oven to 430 F (225 C) with a shallow water-filled tray on the bottom rack.

  2. Combine flour and dry yeast in a large bowl, then stir in warm water, milk, softened butter or margarine, olive oil, sugar, and salt.

  3. Knead the dough by mixer for 10 minutes or by hand for 15 minutes; then transfer to a floured surface and knead for 5 more minutes, adding olive oil if too firm.

  4. Place dough in a bowl, cover with a damp cloth, and let rise in a warm place for 2 hours.

  5. After rising, turn dough onto a floured surface and divide into two pieces.

  6. Shape each piece into a flat, 1/2-inch thick oval or round loaf, and place on a floured or parchment-lined baking tray.

  7. Using a floured knife, cut a 1-inch border around each loaf, then make diagonal diamond patterns within the border.

  8. Whisk yogurt and egg yolk, then brush generously over the loaves.

  9. Sprinkle sesame and nigella seeds over the tops.

  10. Bake for 30 minutes, or until golden brown, then serve hot.
