Instructions
-
Preheat oven to 430 F (225 C) with a shallow water-filled tray on the bottom rack.
-
Combine flour and dry yeast in a large bowl, then stir in warm water, milk, softened butter or margarine, olive oil, sugar, and salt.
-
Knead the dough by mixer for 10 minutes or by hand for 15 minutes; then transfer to a floured surface and knead for 5 more minutes, adding olive oil if too firm.
-
Place dough in a bowl, cover with a damp cloth, and let rise in a warm place for 2 hours.
-
After rising, turn dough onto a floured surface and divide into two pieces.
-
Shape each piece into a flat, 1/2-inch thick oval or round loaf, and place on a floured or parchment-lined baking tray.
-
Using a floured knife, cut a 1-inch border around each loaf, then make diagonal diamond patterns within the border.
-
Whisk yogurt and egg yolk, then brush generously over the loaves.
-
Sprinkle sesame and nigella seeds over the tops.
-
Bake for 30 minutes, or until golden brown, then serve hot.
