Turkish Meat Dumplings (Manti)
Kayseri-style Turkish manti features tender, meat-filled dumplings served with a creamy garlic yogurt and a tangy tomato sauce.

Instructions

Start boiling 4 cups of water with 1 teaspoon salt in a large saucepan.

Prepare dough: Slowly mix flour, salt, and eggs, then knead in water until a firm dough forms; wrap and set aside.

Prepare filling: Combine ground beef, onion, parsley, salt, black pepper, and optional cumin, mint, and sweet paprika.

Divide dough, roll out thinly, and cut into small squares.

Place a chickpea-sized amount of filling on each square; pinch two opposite corners over the filling, then pinch the other two corners together at the center to form a star.

Cook dumplings: Add approximately 10 dumplings to the simmering broth and cook until tender and floating.

Remove cooked dumplings with a slotted spoon to individual serving bowls; repeat for the remaining manti.

Prepare garlic yogurt sauce: Whisk crushed garlic into yogurt until creamy.

Prepare tomato sauce: Melt butter in a small pan, then add tomato paste, water, and optional salt; simmer for a few minutes.

Serve manti: Add a few spoons of cooking broth to each bowl, top with a generous amount of garlic yogurt, and drizzle with tomato sauce.

Garnish with mint, oregano, sumac, and hot pepper flakes if desired.
