Instructions

  1. In a covered saucepan, boil 3 cups of water, add rice, then reduce heat and cook until soft.

  2. Whisk egg, plain yogurt, flour, and 1 cup of water in a separate bowl until smooth.

  3. Stir the cooked rice and its water, then gradually whisk in the yogurt mixture.

  4. Add salt and white pepper, then heat the soup until steaming, whisking continuously but without allowing it to boil; add more water if needed to adjust thickness.

  5. Melt butter in a separate pan, stir in dried mint, then remove from heat.

  6. Add the mint butter to the soup and whisk until fully combined.

  7. Garnish each serving with a fresh mint sprig.
