Instructions

  1. Heat oil for frying in a deep skillet or saucepan.

  2. Prepare tarator sauce by processing yogurt, bread crumbs, crushed walnuts, garlic, lemon juice, and salt; set aside.

  3. Clean mussels, pat them dry, then dip each in flour and skewer three per bamboo stick.

  4. Whisk club soda, flour, salt, and egg yolk into a smooth, cake-batter-like consistency.

  5. Separately, stir water and baking soda until combined.

  6. Dip skewered mussels in the batter, then immediately in the baking soda mixture, and fry in the hot oil, turning until evenly browned.

  7. Serve hot skewers with tarator sauce for dipping, or spread sauce on bread and use to hold mussels.
