Turkish Fried Feta Rolls, or "Cigarette" Pastries
Golden, crunchy Turkish cigar-shaped pastries, filled with savory cheese, make an excellent appetizer or finger food.

Instructions

Preheat about 2 inches of oil to 350-365 F for frying.

If using frozen phyllo, thaw according to package directions.

Layer two phyllo sheets with short sides at the top and bottom.

From the center of the top short side, cut diagonally to both bottom corners, creating three pastry triangles.

Combine crumbled cheese, chopped parsley, and salt and pepper to taste in a small bowl.

Position a pastry triangle with the wide end facing you. Spread about 1 tablespoon of filling in a thin line near the bottom edge, leaving a 1/2 inch border.

Fold the bottom right and left corners of the pastry over the filling towards the center.

Roll the pastry from the wide end towards the point, tucking in any open edges. Moisten the tip of the triangle with water to seal the roll.

Carefully place several pastries into the hot oil, ensuring space between them.

Fry, moving with prongs, until golden brown on all sides.

Drain the fried pastries on paper towels before serving.
