Instructions
-
Combine the yeast mixture (sponge), 1 1/4 cups water, 1 teaspoon yeast, and olive oil in a bowl, then stir in 3 1/4 cups bread flour and salt until a wet dough forms.
-
Knead the sticky dough on a floured surface until smooth, avoiding excessive flour.
-
Transfer the floured dough to a large floured bowl, cover, and let rise for about 2 hours until doubled.
-
Preheat the oven to 450 F with a baking stone for 1 hour; meanwhile, divide the dough into 2 or 4 pieces on a floured surface.
-
Gently flatten each piece into a round or oblong shape. Place them on cornmeal-dusted parchment paper on an overturned cookie sheet, cover, and let rise for 30 minutes until puffy.
-
Lightly spray the loaves with water, sprinkle with nigella seeds, then slide them onto the hot baking stone and bake for about 15 minutes until the bottom is crisp.
-
Serve warm, or re-crisp stored bread in the oven for a few minutes before serving.
