Instructions

  1. Combine the yeast mixture (sponge), 1 1/4 cups water, 1 teaspoon yeast, and olive oil in a bowl, then stir in 3 1/4 cups bread flour and salt until a wet dough forms.

  2. Knead the sticky dough on a floured surface until smooth, avoiding excessive flour.

  3. Transfer the floured dough to a large floured bowl, cover, and let rise for about 2 hours until doubled.

  4. Preheat the oven to 450 F with a baking stone for 1 hour; meanwhile, divide the dough into 2 or 4 pieces on a floured surface.

  5. Gently flatten each piece into a round or oblong shape. Place them on cornmeal-dusted parchment paper on an overturned cookie sheet, cover, and let rise for 30 minutes until puffy.

  6. Lightly spray the loaves with water, sprinkle with nigella seeds, then slide them onto the hot baking stone and bake for about 15 minutes until the bottom is crisp.

  7. Serve warm, or re-crisp stored bread in the oven for a few minutes before serving.
