Turkish Fava Bean Puree Makes a Delicious Appetizer

Instructions

  1. Start boiling water in a covered saucepan; add fava beans, then simmer until very soft, about 20 minutes.

  2. Once beans are soft, add salt, pepper, sugar, and olive oil; stir to combine.

  3. Strain the bean mixture through a fine-wire strainer into a bowl, pressing with a spoon until smooth.

  4. If the paste is too thick, stir in an additional tablespoon of olive oil.

  5. Spoon the warm paste into a shallow dish, smooth the top, and let cool and set.

  6. Once cooled, cover and refrigerate for several hours.

  7. Once firm, cut the fava into squares or diamonds, wetting the knife as needed to prevent sticking.

  8. Arrange fava blocks on a serving plate; drizzle with olive oil and sprinkle with fresh dill.
