Instructions

Line a 9x9-inch pan with greased foil.

Combine granulated sugar, 1.5 cups water, and lemon juice in a medium saucepan; heat on medium, stirring until sugar dissolves, then bring to a boil.

Brush pan sides with a wet brush and insert a candy thermometer.

Boil the sugar mixture without stirring until it reaches 240 F (allow 45-60 minutes).

In a larger saucepan, whisk 3 cups water, cornstarch, and cream of tartar until smooth.

Heat this mixture on medium, whisking constantly, until it boils and thickens into a paste.

Once sugar syrup reaches 240 F, remove from heat and slowly whisk it into the cornstarch paste until fully combined.

Reduce heat to low, simmer for about an hour, whisking every 8-10 minutes, until mixture is very thick, gluey, and light golden.

Remove from heat, then stir in rosewater and food coloring.

Pour into the prepared pan and let set uncovered overnight.

The next day, use the foil to remove the candy from the pan. Dust a workstation with powdered sugar, flip the candy onto it, peel off foil, and dust the top. Cut into small squares with an oiled knife, then dust all sides with powdered sugar.
