Instructions

  1. Combine 5 to 6 ounces cold water with 2 tablespoons extra finely-ground coffee and 1 to 3 teaspoons sugar, if desired, in a cezve; stir until dissolved and do not stir again.

  2. Heat the cezve over medium heat until the coffee rises and foams, then remove it just before boiling.

  3. Skim the foam into serving cups, then return the cezve to heat to foam again.

  4. Slowly pour the coffee into serving cups to ensure the foam remains on top.

  5. Allow the coffee to settle for a few minutes before serving.
