Instructions

  1. Pat 1 1/2 lbs boneless, skinless chicken breasts dry, then cut into 1-inch pieces.

  2. Grate 1 large onion and 2 garlic cloves, then press their juice through a fine mesh strainer into a bowl, discarding the pulp.

  3. Combine the onion-garlic juice with 1/2 cup plain yogurt, 3 tbsp vegetable oil, 2 tbsp tomato paste, 1 tsp black pepper, 1 tsp paprika, and 1 tsp kosher salt.

  4. Add the cubed chicken to the marinade, toss to coat, cover, and refrigerate for at least 4 hours or overnight.

  5. Prepare a medium (350-375°F) grill; soak bamboo skewers for 30 minutes if using.

  6. Thread marinated chicken onto skewers, discarding remaining marinade.

  7. Lightly salt the kebabs, then grill on all sides for about 12 minutes total.
