Pat 1 1/2 lbs boneless, skinless chicken breasts dry, then cut into 1-inch pieces.

Grate 1 large onion and 2 garlic cloves, then press their juice through a fine mesh strainer into a bowl, discarding the pulp.

Combine the onion-garlic juice with 1/2 cup plain yogurt, 3 tbsp vegetable oil, 2 tbsp tomato paste, 1 tsp black pepper, 1 tsp paprika, and 1 tsp kosher salt.

Add the cubed chicken to the marinade, toss to coat, cover, and refrigerate for at least 4 hours or overnight.
