Turkish Bulgur and Vegetable Pilaf

A classic Turkish bulgur and vegetable pilaf serves as an excellent side dish for grilled meats, poultry, or any meal typically accompanied by rice.

Instructions

  1. Melt butter and oil in a covered skillet; fry grated onion for about 5 minutes until tender.

  2. Add grated tomato with its juice and grated pepper; fry until vegetables soften and liquid reduces.

  3. Stir in bulgur. Add salt, pepper, tomato paste, sugar, and broth, then stir until combined.

  4. Bring the mixture to a boil, then cover and reduce heat to low. Simmer for 15-20 minutes until liquid is absorbed.

  5. Remove from heat and let cool, keeping the pan covered.

  6. Stir the pilaf before serving. Garnish with fresh or grilled pepper, tomato, and Italian parsley.
