Turkish Bulgur and Vegetable Pilaf
A classic Turkish bulgur and vegetable pilaf serves as an excellent side dish for grilled meats, poultry, or any meal typically accompanied by rice.

Melt butter and oil in a covered skillet; fry grated onion for about 5 minutes until tender.

Add grated tomato with its juice and grated pepper; fry until vegetables soften and liquid reduces.

Stir in bulgur. Add salt, pepper, tomato paste, sugar, and broth, then stir until combined.

Bring the mixture to a boil, then cover and reduce heat to low. Simmer for 15-20 minutes until liquid is absorbed.

Remove from heat and let cool, keeping the pan covered.

Stir the pilaf before serving. Garnish with fresh or grilled pepper, tomato, and Italian parsley.
