Turkish Beans: Pinto Beans in Olive Oil

Instructions

  1. Sauté diced onion and garlic in 3 tablespoons of olive oil in a covered saucepan until soft.

  2. Add beans, carrots, grated tomato, tomato paste, sugar, and spices; pour in water to just cover, and stir to combine.

  3. Bring the mixture to a boil, then cover, reduce heat to low, and simmer until the water reduces and beans and carrots are tender.

  4. Remove from heat, allow to cool, then spoon onto a serving plate and drizzle with olive oil.

  5. Cover and chill until ready to serve.

  6. Garnish with chopped Italian parsley leaves just before serving.
