Turkey Tenderloin With Lemon and Dijon Mustard
A simple turkey tenderloin, marinated with lemon and Dijon, can be prepared quickly or ahead of time for an easy meal.

Instructions

Preheat the oven to 350 F.

Slice the turkey tenderloin in half crosswise, then season with salt and pepper.

Whisk together Dijon mustard, lemon zest, lemon juice, olive oil, dried thyme, and garlic powder in a bowl to create the marinade.

Coat the turkey in the marinade, then cover and let it marinate for 20 minutes at room temperature or up to 24 hours in the refrigerator.

Line a cookie sheet with parchment paper, then place the marinated turkey on it.

Roast the turkey for 45 to 55 minutes, or until its internal temperature reaches 160 F.

Remove the turkey from the oven, cover with foil, and let it rest for 8 to 10 minutes before slicing.
