Turkey Taco Soup

Instructions

  1. Preheat a large, heavy-bottomed pot over medium heat, then add oil and sauté onion for 2 minutes.

  2. Stir in bell pepper, jalapeño, and garlic; sauté for an additional 2 minutes.

  3. Mix in chili powder, cumin, and oregano, cooking for 1 minute.

  4. Add tomatoes with juice, pinto beans, turkey, and broth; stir and season with salt and pepper.

  5. Increase heat to bring the soup to a simmer.

  6. Reduce heat to low and let it simmer, uncovered, for 10 minutes.

  7. Serve with your choice of avocado, sour cream, and tortilla chips.
