Turkey Noodle Soup

A rich and satisfying turkey noodle soup can be created by simmering a turkey carcass for broth, then combining it with vegetables, noodles, and turkey meat.

Instructions

  1. Place the turkey carcass, a quartered onion, and a bay leaf in a stockpot; cover with 1 gallon cold water, bring to a boil, then simmer for 3 hours.

  2. Remove and discard the carcass; strain the broth, rinse the pot, and return 2-3 quarts of broth to the pot.

  3. Bring the broth to a boil, then add carrots and celery, simmering for 2 minutes until the carrots are nearly tender.

  4. Add noodles and cook until al dente as per package instructions.

  5. Stir in the turkey meat and simmer until heated through; season with kosher salt and ground white pepper to taste.

  6. Serve immediately, garnished with chopped parsley.
