Instructions

  1. Combine liquid smoke, soy sauce, Tabasco, Worcestershire, mesquite, brown sugar, onion powder, garlic powder, and kosher salt in a large zip-top bag.

  2. Add thinly sliced turkey strips to the marinade, seal the bag, remove air, and refrigerate for 12 to 24 hours.

  3. Remove turkey strips from the marinade and pat dry with paper towels.

  4. Arrange the marinated strips in a single layer on dehydrator racks, ensuring space between them.

  5. Dehydrate until the turkey jerky is leathery and chewy but not crisp.

  6. Store the finished jerky in sealed bags in the refrigerator.
