Turkey Green Chili

Instructions

  1. Heat oil in a large pot over medium-high heat. Add poblano peppers, onion, and salt, cooking and stirring for 5 minutes until softened.

  2. Stir in garlic and cook for 1 minute until fragrant.

  3. Add turkey and cook, stirring frequently, for 5 minutes until browned.

  4. If using beer, add it and bring to a boil, scraping up any browned bits from the pot.

  5. Pour in broth and bring to a boil.

  6. Add hominy and beans; bring to a simmer. Season with salt and pepper, then simmer for 20 minutes.

  7. Serve topped with cilantro, scallion, avocado, and cotija cheese.
