Turkey Divan Casserole With Broccoli

Preheat the broiler to approximately 500°F (about 4 inches from heat).

In a 1- to 2-quart saucepan, melt butter over medium heat, then whisk in flour and cook for 1-2 minutes; remove from heat.

Whisk milk and egg yolk, then gradually incorporate into the flour mixture.

Return the saucepan to heat, add dry mustard, salt, and pepper; cook, stirring constantly, until the mixture thickens and boils.

Stir in cheddar cheese until fully melted.

Layer hot broccoli and turkey in a 2-quart baking dish, spooning the cheese sauce between layers and over the top.
