Tuna Croquettes
Classic tuna croquettes can be prepared in advance and fried fresh for a meal, with an option to substitute salmon.

Instructions

In a saucepan, melt butter over medium heat, then sauté onion and garlic until tender.

Stir in flour, salt, pepper, and paprika; cook, stirring, for 2 minutes until bubbling.

Whisk in milk until the sauce thickens and bubbles.

Mix in the drained tuna.

Transfer the tuna mixture to a bowl, cover, and refrigerate for at least 3 hours or overnight.

When ready, moisten hands and shape the chilled mixture into 8 oval patties.

Set up two shallow dishes: one with breadcrumbs, the other with beaten egg and 1 tablespoon water.

Coat each croquette sequentially in breadcrumbs, then egg, then breadcrumbs again.

Heat vegetable oil to 350F in a heavy skillet.

Deep-fry croquettes for 2 minutes per side until golden brown.

Drain on paper towels.

Serve hot with tartar sauce.
