Tuna Corn Chowder

A hearty tuna corn chowder, thickened with pureed corn, makes an ideal soup for lunch or brunch.

Instructions

  1. Puree 2 cups of corn.

  2. Melt butter in a large saucepan over medium heat.

  3. Sauté chopped onion and celery until translucent; add green onion and cook for 1 minute.

  4. Add pureed corn, remaining corn kernels, potatoes, chicken broth, salt, and pepper. Bring to a boil, then cover and simmer for 15 minutes until potatoes are tender.

  5. Stir in half-and-half, tuna, and half the parsley; cook for 5 minutes until heated through.

  6. Garnish with remaining parsley before serving.
