Tuna, Cheese, and Rice Casserole

Instructions

  1. Preheat the oven to 400 F and butter a 2-quart baking dish.

  2. Melt 4 tablespoons butter in a large skillet over medium-low heat, then sauté onion and celery for 5 minutes until tender.

  3. Stir in flour, pepper, and dry mustard; cook until bubbly. Gradually add Worcestershire sauce and milk, stirring until thickened.

  4. Mix in 1 cup shredded cheese until melted. Add flaked tuna, peas, and optional pimento to the sauce; season with salt as needed.

  5. Layer half the hot rice, 3/4 cup shredded cheese, and half the sauce in the prepared baking dish. Repeat layers, finishing with the remaining shredded cheese.

  6. Melt 2 tablespoons butter and toss with breadcrumbs; sprinkle over the casserole.

  7. Bake for 20 minutes, or until the topping is browned and the casserole is bubbly.

  8. Cool slightly before serving.
