Tuna, Cheese, and Rice Casserole
A comforting tuna casserole combines onion, celery, peas, and rice, and is made with a savory homemade cheese sauce.

Preheat the oven to 400 F and butter a 2-quart baking dish.

Melt 4 tablespoons butter in a large skillet over medium-low heat, then sauté onion and celery for 5 minutes until tender.

Stir in flour, pepper, and dry mustard; cook until bubbly. Gradually add Worcestershire sauce and milk, stirring until thickened.

Mix in 1 cup shredded cheese until melted. Add flaked tuna, peas, and optional pimento to the sauce; season with salt as needed.

Layer half the hot rice, 3/4 cup shredded cheese, and half the sauce in the prepared baking dish. Repeat layers, finishing with the remaining shredded cheese.

Melt 2 tablespoons butter and toss with breadcrumbs; sprinkle over the casserole.

Bake for 20 minutes, or until the topping is browned and the casserole is bubbly.
