Tuna Carbonara

Instructions

  1. Start boiling a large pot of salted water for the pasta; cook until al dente, reserving 1/2 cup of the cooking water.

  2. In a large saucepan, cook bacon until crisp, then drain, crumble, and set aside, leaving 1 tablespoon of fat in the pan.

  3. Beat eggs with cream in a bowl and set aside.

  4. Melt butter and oil in the bacon saucepan over medium heat, then sauté bell pepper, garlic, and onion until tender.

  5. Add the cooked pasta and tuna to the saucepan, stirring until heated through.

  6. Stir in the egg mixture, lifting the pasta to coat thoroughly.

  7. Add the reserved pasta water, cheese, crumbled bacon, and parsley, stirring until the cheese melts and ingredients are well combined.

  8. Serve immediately.
