Instructions

  1. Start boiling water and cook soba noodles according to package directions; drain well.

  2. In a pot, combine dashi soup, soy sauce, mirin, and salt; heat until it comes to a rolling boil.

  3. Divide the cooked soba noodles among four bowls.

  4. Pour the hot soup over the noodles in each bowl.

  5. Crack an egg onto the noodles in each bowl.

  6. Distribute green onion among the bowls and serve immediately.
