Instructions

  1. Start preheating your dehydrator or oven to 150 F, depending on your chosen method.

  2. In a small saucepan, whisk soy sauce, brown sugar, olive oil, garlic, and pepper over low heat until the sugar dissolves, then cool completely.

  3. Place fish strips in a resealable bag with the cooled marinade; refrigerate for 4 to 8 hours.

  4. Drain fish for 5 minutes in a strainer, then pat each strip dry.

  5. Arrange dried fish strips on a rack without overlapping.

  6. Dehydrate fish for the recommended time (typically 4 hours in a dehydrator or 12+ hours in an oven at 150 F), checking for a leathery texture.

  7. Cool the jerky on a rack at room temperature.
