Triple Berry Sheet Pan Pancakes

Instructions

  1. Preheat oven to 475 F; line a baking sheet with parchment paper.

  2. Whisk eggs, buttermilk, milk, honey, and vanilla in a medium bowl.

  3. Combine flour, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg in a large bowl.

  4. Fold the wet mixture into the dry ingredients, then fold in melted butter until just combined; do not overmix.

  5. Spread batter onto the prepared sheet and top with fresh berries.

  6. Bake for 16-17 minutes, until a toothpick inserted in the center comes out clean.

  7. Let stand for 3-5 minutes, then cut into 12 squares.

  8. Serve with maple syrup; dust with powdered sugar if desired.
