Tri Tip and Caramelized Onion Sandwiches With Mustard Aioli

Instructions

Marinate steaks in a sealed bag for 2 hours.

Preheat grill to medium-high.

In a skillet, heat olive oil, then add sliced onion, salt, and pepper, cooking on high for 2 minutes, then medium-low for 5 minutes, turning frequently.

Add wine and Worcestershire sauce to the onions, cook 2-3 minutes; then add stock, reduce heat to low, and simmer for 15 minutes.

Grill steaks for 10 minutes, turning often, adjusting time for thicker cuts.

Remove steaks from heat and rest for a few minutes before slicing.

Combine mayonnaise, mustard, and chili powder to prepare the aioli; refrigerate if making ahead.

Assemble sandwiches by placing Swiss cheese, 6-8 meat slices, and 1/4 cup caramelized onion on the bottom bun, then spread aioli on the top bun half.
