Traditional Yorkshire Pudding

Instructions

  1. Preheat the oven to 450 F (230 C).

  2. Whisk 4 large eggs, 1 cup milk, and a pinch of salt; let stand for 10 minutes.

  3. Gradually whisk 1 cup all-purpose flour into the egg mixture until smooth, sifting if necessary to remove lumps. Allow the batter to rest for at least 30 minutes, or up to several hours.

  4. Place a pea-sized amount of lard, dripping, or 1/2 teaspoon vegetable oil in each opening of a Yorkshire pudding or 12-hole muffin tin, then heat the tin in the oven until the fat is smoking.

  5. Whisk 2 tablespoons cold water into the batter, then quickly fill each tin opening 1/3 full and return to the oven.

  6. Bake for approximately 20 minutes until golden brown, puffed, and crisp. Serve immediately and repeat for remaining batter.
