Traditional Yorkshire Pudding

Preheat the oven to 450 F (230 C).

Whisk 4 large eggs, 1 cup milk, and a pinch of salt; let stand for 10 minutes.

Gradually whisk 1 cup all-purpose flour into the egg mixture until smooth, sifting if necessary to remove lumps. Allow the batter to rest for at least 30 minutes, or up to several hours.

Place a pea-sized amount of lard, dripping, or 1/2 teaspoon vegetable oil in each opening of a Yorkshire pudding or 12-hole muffin tin, then heat the tin in the oven until the fat is smoking.

Whisk 2 tablespoons cold water into the batter, then quickly fill each tin opening 1/3 full and return to the oven.

Bake for approximately 20 minutes until golden brown, puffed, and crisp. Serve immediately and repeat for remaining batter.
