Traditional Yorkshire Barm Brack

Instructions

  1. Preheat the oven to 325 F (170 C/Gas 3).

  2. The night before, combine dried fruits and tea in a large bowl, stir, cover, and let soak overnight.

  3. Line and lightly grease a 22-centimeter (8 1/2-inch) cake tin.

  4. Cream butter and dark brown sugar in a bowl until light and smooth.

  5. Mix flour with baking powder.

  6. Gradually beat eggs into the creamed butter mixture, alternating with additions of the flour mixture, until both are fully incorporated.

  7. Stir in molasses, whiskey, nutmeg, and lemon juice.

  8. Drain the soaked fruits, add ground almonds, and stir into the cake mixture until evenly distributed.

  9. Spoon the batter into the prepared cake tin and level the surface.

  10. Bake for 2 to 2 1/2 hours, or until dark golden brown.

  11. Let the cake cool completely in the tin on a cooling rack before serving.
