Traditional Welsh Cawl Stew

A hearty and filling traditional Welsh cawl stew combines lamb or beef with bacon broth and a medley of root vegetables.

Instructions

  1. Melt lard in a large stockpot over high heat. Add onions, rutabaga, carrots, and leeks; brown for 3 minutes, stirring constantly.

  2. Remove vegetables to a bowl. Add beef to the pot and brown on all sides.

  3. Return the browned vegetables to the pot with bacon pieces, bay leaf, and thyme.

  4. Cover ingredients with cold water and bring to a boil; reduce heat and simmer for 2 hours until the beef is tender.

  5. Remove beef from the pot; once cool enough to handle, cut it into 2-inch cubes.

  6. Add potatoes to the pot, bring to a boil, and cook for 20 minutes until tender.

  7. Return the cubed beef to the pot and cook for 10 more minutes.

  8. Season well with salt and pepper, then serve hot.
