Traditional Spanish Yemas de Santa Teresa
A traditional Spanish confection, Yemas de Santa Teresa features egg yolks, sugar, and water, shaped into balls and coated in powdered sugar.

Instructions

Start boiling water and sugar in a saucepan, stirring to dissolve sugar, then add optional lemon peel and simmer until a thick syrup forms. Remove from heat and discard the peel.

Lightly beat egg yolks in a bowl.

Pour beaten yolks into the syrup. Cook on lowest heat, stirring constantly for 3 to 4 minutes until the mixture thickens and pulls away from the pan.

Remove from heat and spoon the mixture onto a plate to cool.

Once cooled, sprinkle powdered sugar on a surface, place the yolk mixture on it, and roll to coat.

Pinch off small pieces, about golf ball size, and roll them into balls, coating thoroughly with confectioners' sugar.

Chill the finished Yemas in the refrigerator before serving.
