Instructions

  1. Start boiling salted potatoes until tender; drain, mash, and set aside.

  2. Separate egg yolks and whites; dice whites and press yolks through a fine sieve.

  3. In a bowl, combine mashed potato, sieved egg yolks, diced egg white, parsley, horseradish, salt, and pepper; stir well.

  4. Gently mix flaked mackerel chunks into the potato mixture until just combined.

  5. Divide the mixture into six portions; roll each into a ball, dredge in flour, then beaten egg, then flour again, and flatten into a patty.

  6. Heat 1/4-inch of oil in a skillet; fry three fishcakes for 3 minutes per side until cooked.

  7. Remove and drain on paper, keeping warm; repeat with remaining fishcakes.
