Traditional Slow Cooker Irish Lamb Stew

Instructions

  1. Brown lamb cubes in a large skillet with vegetable oil over medium-high heat.

  2. Meanwhile, cut turnips into 1/2-inch cubes, slice carrots into 1/2-inch rounds, coarsely chop the onion, and quarter the potatoes (peel optional).

  3. Transfer the browned lamb and all prepared vegetables to a slow cooker. Add salt, pepper, and enough water or stock to cover.

  4. Cook on low, covered, for 8 to 10 hours.

  5. Uncover and set the slow cooker to high.

  6. Whisk flour with 1/4 cup water to form a paste, then slowly stir it into the stew until thickened.

  7. Stir in parsley and serve.
