Traditional Singing Hinny
Sweet Singing Hinnies, traditional griddle cakes from England's northeast, sizzle on a hot pan and are best enjoyed warm with butter.

Instructions

Sieve flour, baking soda, cream of tartar, and salt into a large bowl.

Rub cold, cut butter and lard into the flour mixture until it resembles rough sand.

Stir in lemon zest and mixed fruit, then gradually add milk until a soft, pliable dough forms.

Roll the dough to 5mm thick on a floured surface and cut into 6cm rounds.

Heat and lightly grease a griddle pan.

Cook the griddle cakes for approximately 5 minutes per side, until golden brown.

Serve warm with butter or a sprinkle of sugar.
